Established in 1846 when JW Routt migrated to Chappell Hill, Texas and acquired the first farm property. After decades of cotton farming and other business concerns, Routt Family Farm is now celebrating 8 generations involved in the farm and now produces quality F1 Wagyu, one calf at a time. Routt Family Farm was named in honor of my grandfather Captain Joseph E. Routt a multi sport Texas A&M legend and holds the distinct honor of being not only Texas A&M's first All American, but one of only five two time All Americans. Captain Routt was killed in action during the Battle of the Bulge and although gone today his spirit and ethics continue today to include being a veteran owned and operated farm.
Routt Family Farm Wagyu is Processed and Aged to your specification up to 14 or 28 days. 1/4 1/2's or Whole Carcass Wagyu Beef can be picked up from the processor direct or delivery will be arranged after complete payment arrangements. 'WAGYU' refers to all Japanese beef cattle, where 'Wa' means Japanese and 'gyu' means cow.
Wagyu initially were used as draft animals in agriculture, and were selected for their physical endurance. This selection process favored animals with more intra-muscular fat cells – ‘marbling.'
Due to the selective breeding that was used to store more intramuscular fats, the Wagyu breed produces a superior cut of beef compared to most other breeds. When it comes to beef quality, more intramuscular fat means more marbling - resulting in higher carcass grading. The majority of Wagyu carcasses grade as prime. And, in fact, they often times grade above prime - meaning the USDA scale doesn't formally account for such highly marbled beef.

The health benefits of Wagyu are scientifically proven. A study published in 2016 states Wagyu beef has higher amounts of monounsaturated fats than other meats. Monounsaturated fats can lower LDL cholesterol (the ‘bad’ cholesterol) and increase HDL cholesterol (the ‘good’ cholesterol). It even states within the study that potentially, it could reduce the risk of cardiovascular disease. For this reason, monounsaturated fats are also known as ‘heart-healthy fats.’
Pennsylvania State University also published more positive results of a study in 2011 (published in the American Journal of Clinical Nutrition). PSU confirmed that eating monounsaturated fatty acids – contained in Wagyu in high levels – is better for your heart than eating specially formulated lean products.
As well as a better ratio of monounsaturated fats to saturated fats, even the saturated fat in Wagyu is unique. Around 40% of the saturated fat in Wagyu meat consists of stearic acid, which contributes to keeping the impact on cholesterol levels low.
Conjugated linoleic acid (otherwise known as CLA) is also in Wagyu meat. CLA-rich foods help boost our health, can help decrease the risk of heart disease and type 2 diabetes, and also contributes to weight loss. Wagyu contains the highest amount of conjugated linoleic acid (otherwise known as CLA) per gram of almost any foodstuff. That works out to approximately 30% more than other cattle breeds.

One-quarter at 250lbs hanging weight would be $1,562 standard processing fees included . After trimming, deboning, and aging for 14-21 days, your finished product should be around 150lbs, which works out to approximately $9/lb for premium locally raised Wagyu!
Buying Direct
If you are new to buying beef directly from a producer, we understand all the terminology can get a little confusing. When you buy directly from us, you are buying a share of the animal - you are not buying finished boxed beef. So if you buy a quarter, you are purchasing 25% of the animal to be processed. Your deposit reserves your share and is a credit toward the final price. We deliver the steer to the processor where they weigh the animal's carcass, which is how we calculate the final price. The steer is then hung to age for a period of 14-21 days (if you chose) to enhance the tenderness and flavor of the beef. It is then processed to your specifications (we provide our recommendations but you can customize a half or whole carcass). We will send you an invoice for your remaining balance that must be paid while the steer is hanging. The processor will call you to let you know when it is ready to pick up unless previous arrangements are made to deliver.
Why Buy Direct
1) It saves us both money because there are no required fees for state or USDA inspection when you have your own steer processed (remember - your share of the steer belongs to you when it arrives at the processor!). If we process our animals to sell individual retail cuts, there are additional fees and logistics, so that is avoided by purchasing the carcass directly from us before it is cut and processed.
2) We price by the hanging weight in case someone wants to customize their cuts (more or less ground beef, bone-in versus boneless, smoked sausage, etc.) - we couldn't definitively know what the finished weight would be. We prefer not to price by live weight because all steers are different and there could be a variance in the actual meat yield.
3) You pay the processor separate with most farm to table ranchers but it is included in our fee to simplify the process for you.
What You Get:
You will receive an assortment of all cuts equal to your share of the carcass. A good rule of thumb is approximately 1/3 steaks, 1/3 ground, and 1/3 roasts and other cuts.

This example of a quarter was large at approximately 180lbs of finished product, which will take about 4-5 cubic feet of freezer space to store. The total price worked out to less than $8.50 per finished pound. For locally raised, antibiotic free Wagyu beef, that’s a heck of a deal!
Quarters will be cut similar to above with limited ability to customize. Halves and whole beef cut sheets can be 100% customized to your liking.

Our cattle are raised on pasture and finished on a feed blend formulated to enhance the superior qualities of the Wagyu breed.
From the day our calves hit the ground to the day they are taken to the processor our cattle are fed out and finished right here on our ranch or under our direct supervision. Our cattle are even fed hay that is cut and baled on Routt Family Farmland.
Although some beef producers only age their steaks, we age the entire carcass for 14-28 days upon request. Every cut of meat comes in a vacuum-sealed package with a label.
